Fruit pound cake: 250 g each of butter, flour and sugar, 4 eggs and whatever fruit is left in the fridge, baked for 45 minutes at 180 °C.

« A pound cake with all the fruit that was sulking in the fridge! »: a zero-waste fruit pound cake, nicely golden and well risen.

The base is as simple as it gets: equal weights of softened butter, flour and sugar, four eggs added one at a time, and a spoonful of baking powder. No need to melt the butter or whip the egg whites.

The slightly tired fruit, cut into pieces, goes in at the end.

  1. Take the butter out of the refrigerator 1 hour ahead.
  2. Preheat the oven to 180 °C.
  3. Beat the softened butter with the sugar and vanilla sugar.
  4. Add the eggs one at a time.
  5. Fold in the flour and baking powder, then the fruit cut into pieces.
  6. Pour into a buttered and floured pan and bake for 30 minutes, then check with a knife and bake 10 minutes longer if needed.
