Tuna-Stuffed Avocados with Tomato Mozzarella and Beets

The filling couldn't be simpler: flaked tuna in water, mayonnaise, salt and pepper, heaped into the avocado halves. Around them, slices of tomato and mozzarella drizzled with balsamic vinegar, and sliced beets.
No cooking at all, just an hour in the refrigerator before serving.

Directions
- Cut the avocados in half and remove the pits.
- Drain and flake the tuna, then mix it with the mayonnaise, salt and pepper.
- Fill the avocado halves and refrigerate for at least an hour.
- Slice the tomatoes and mozzarella and arrange them, alternating.
- Drizzle with olive oil and balsamic vinegar.
- Place the avocados in the center, with the tomato mozzarella and sliced beets around them. Garnish with parsley.
