« Homemade strawberry tart, all made with my own two hands! »: a golden crust, vanilla pastry cream and a crown of bright red strawberries. Axelle made it again on July 29.

The crust is blind-baked for 20 to 25 minutes, then filled with cooled pastry cream. The strawberries go on last, whole or halved.

The base is Marmiton's top-rated strawberry tart recipe, made here with a store-bought crust as in the photos.

Crust

  1. Line a 25 cm pan with the pastry and its parchment paper, fill with dried beans and blind-bake for 20 to 25 minutes at 180 °C.

Pastry cream

  1. Bring the milk to a boil with the vanilla sugar.
  2. Whisk the egg with the sugar until pale, then add the flour.
  3. Pour in the boiling milk while stirring, return to the heat and cook, stirring, until it comes to a boil.

Assembly

  1. Spread the cream over the crust and arrange the strawberries on top.
