A peach tart with apricots, served on June 30 after the green bean salad. In the photo, the fruit in syrup forms a golden rosette on puff pastry.

The pastry is pre-baked for 15 minutes, topped with fruit, then covered with a mixture of eggs, sugar and crème fraîche before another 15 minutes in the oven.

If you use fruit in syrup, drain it well before placing it on the pastry.

  1. Preheat the oven to 210 °C.
  2. Pre-bake the pastry without filling for 15 minutes.
  3. Meanwhile, beat the eggs and mix in the cream and sugar.
  4. Cover the pre-baked pastry with peach slices and well-drained apricot halves.
  5. Pour the egg, cream and sugar mixture over the top and bake for 15 minutes.

  • 4 peaches (or canned peach halves in syrup)
  • Canned apricot halves in syrup
  • 2 eggs
  • 75 g sugar
  • 10 cl crème fraîche
